Recipe: Creamy Pralines

Almost-Like-Mom’s Creamy Pralines

  • 1 ½ cups sugar
  • 3/4 cup packed brown sugar
  • ½ cup milk
  • 6 T butter
  • 1 ½ cups large pecan pieces, toasted for 10 minutes at 300 degrees
  • 1 ½ tsp. ground cinnamon
  • 1 ½ tsp. vanilla

Mix all ingredients except for pecans in a saucepan, and bring to a boil. Add pecans, and stir constantly until mixture reaches soft-ball stage (238 degrees; use a candy thermometer). Immediately remove from heat and stir until mixture is thick and cloudy. Moving quickly, drop mixture two tablespoons at a time onto wax paper. Let cool. Makes about 18 pralines.
