Orange-Date Peanut Butter Cookies
Makes 8 dozen cookies 3/4 c. butter or margarine, softened 1 c. creamy peanut butter 1 c. granulated sugar 1 c. firmly packed brown sugar 2 eggs 1 1/2 tsp. grated orange rind 1 tsp. vanilla 2 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 c. finely chopped pitted dates Preheat oven to 350 degrees. Cream butter and peanut butter; gradually add sugars, beating well with an electric mixer at medium speed. Add eggs one at a time, beating well after each addition. Stir in orange rind and vanilla. In a separate bowl, combine flour, baking powder, soda, and salt. Add to creamed mixture, beating until blended. Stir in dates. Shape dough into 1-inch balls, place two inches apart on ungreased cookie sheet. Flatten with a fork, and bake for 11 to 13 minutes or until lightly browned. Cool slightly, then transfer to wire racks.
