Serves 8
3 1/2 c. cooked ham, cut in cubes 1 1/2 c. cut celery 1 c. diced green pepper 1 medium onion, chopped 1 small can water chestnuts, sliced 3 1/2 c. cooked black-eyed peas, drained 1 1/4 c. mayonnaise 1 1/2 tsp. lemon juice 1/3 c. crushed potato chips 8 lettuce cups Combine first eight ingredients and mix lightly. Pour into a greased 2 quart baking dish. Top with crushed potato chips. Bake in 350 degree oven for 25 minutes. Serve hot in lettuce cups.
