Apple-Bacon-Spinach Salad
Serves 6-8
1/2 lb. slice bacon 2-3 cloves garlic, minced 1 lb. fresh spinach, washed well and stems removed 3 large red apples, unpeeled and diced 1 bunch green onions, chopped 1 T. lemon juice 2 T. mayonnaise 1 c. croutons 1/2 c. grated Swiss cheese
Cook bacon until crisp, reserving 1/2 c. drippings. Crumble bacon and set aside. Combine drippings with garlic and set aside until just before serving, preferably for several hours. Tear spinach into bite-size pieces and place in salad bowl with apples and green onions. Combine garlic-bacon dripping mixture with lemon juice and mayonnaise; mix well. Pour over spinach and toss. Add crumbled bacon, croutons, and cheese, and toss again.
