Apples taste great fresh off the tree and in a variety of dishes. Austin food stylist Fran Gerling adapted and prepared the following colorful and delicious treats from recipes provided by Carlo Adams of Adams Apples.
Ingredients: 10 medium carrots 4 to 6 large apples 1/3 c. firmly packed brown sugar 3 T. butter
salt and pepper to taste
Preheat oven to 350 degrees. Butter a 9 x 13 baking dish. Peel and slice carrots. Peel, core, and cut apples into eighths. Make a sauce by combining brown sugar and butter in a saucepan and stirring until sugar has dissolved. Combine apples and carrots in a baking dish, cover with sauce, and toss gently. Sprinkle with salt and pepper, cover and bake 35 minutes. Before serving, sprinkle with minced parsley and garnish with sprig of parsley.
