Peach and Onion Salsa

Makes 1 1/2 cups.

  • 2 firm, ripe, unpeeled peaches, diced 
  • 1/2 c. chopped sweet onion 
  • 2 T. minced red bell pepper 
  • 2 T. minced green bell pepper 
  • 1 T. fresh lime juice 
  • 1 T. finely chopped fresh cilantro 
  • 1 T. olive oil 
  • 1/2 tsp. cumin 
  • 1/2 tsp. salt 
  • 1/8 tsp. pepper minced 
  • jalapeño pepper to taste 

Combine ingredients in a large bowl. Cover and refrigerate for 30 minutes. Add more jalapeño if spicier salsa is desired. Recipe can be prepared 2 hours ahead and refrigerated. Serve with seafood or poultry.
