Most Texans are familiar with the kolache blueprint: soft, yeasted dough filled with sausage, jam, or cream cheese. But this Czech staple—introduced by Central European immigrants in the mid-19th century—has become a template to tell a much bigger story about who we are and how we eat. Across the state, bakers are making use of the treat to reflect the dishes that shape their communities, like Vietnamese pho, Indian curries, and Cajun boudin. The result is a new generation of kolaches, and their savory cousin klobasniky, that rises above tradition.
