Former Gov. Wilbert Lee “Pappy” O’Daniel was an iconic Texas character. When he was inaugurated in 1941, he held a giant barbecue at the governor’s mansion in Austin, serving 40,000 pounds of meat. This photo shows workers preparing the meal. Behind them, you can see the huge trench they dug to smoke the meat.
